Chimichurri

Ingredients

  • Garlic, 8 cloves, minced
  • Lemon, 1 wedge, juice of
  • Olive oil, extra virgin, 3⁄4 cup
  • Onion, red, diced, 1 Tbs
  • Oregano, dried, 1 tsp
  • Parsley, flat leaf, 1 bunch
  • Pepper, black, 1 tsp
  • Salt, 1/2 tsp
  • Vinegar, red wine, 1/4 cup

Directions

  1. Pulse parsley in processor to chop.
  2. Add remaining ingredients and blend.
  3. Separate sauce into equal parts. Use half for basting or marinade and use other half for table service.
