Hummus

Ingredients

  • Garbanzo beans (a.k.a. chick peas) 3 cans, drain and discard liquid
  • Tahini paste, 3 Tbs
  • Olive oil, cup
  • Lemon Juice, fresh, from 2 squeezed lemons
  • Garlic, 2 cloves
  • Paprika and chopped parsley for garnish
  • Parsley chopped, for garnish
  • Salt, 1 tsp.
  • Pepper, 1 tsp.

Directions

  1. Add olive oil, lemon juice, garlic, salt, and pepper to blender.
  2. Blend till the cloves of garlic disappear, then stop the blender and add the drained garbanzo beans. Turn the blender back on and blend till the beans are pureed. Occasionally it will be necessary to stir the bean paste with a wooden spoon to ensure even blending.
  3. Place the paste into a serving bowl then drizzle with olive oil and sprinkle the top with the paprika and the chopped parsley. Serve with tortilla chips or toasted strips of pita bread for dipping.
